When spam is quarantined into a group, it just builds and builds.
Isn't there a way to have it deleted automatically, after x amount of
time?

Of course I looked at "auto-expire" and "total-expire". Both these
options require reading the spam. I'd rather not.

Sounds like you are speaking of Gnus. Do you use Spam package? Its
spam-split function in nnmail-split-fancy variable moves spam messages
to your spam group and automatically marks them as expirable.

Variable nnmail-expiry-wait or group parameter expiry-wait (for your
spam group) defines how many days mail will stay in the group before
expiring. Target for expiring is defined by variable
nnmail-expiry-target or group parameter expiry-target.
